Odo v9 Inventory valuation methods

In odoo v9 the inventory valuation fields have been moved from the Product to the product category.
obviously this makes things easier to set the methods.
But what happens when you have products within a category that you do not want to follow the same Inventory method?
for instance when setting 'Perpetual Inventory' in the Valuation method for a category, you may have some products that you want dropshipping, so they really need to be 'Periodic'.
Does this mean you have to move them into a different category?
It seems to me you should still be able to Override at the Product level?
is there any module to do that or am I missing something?
